Crunchy Apple Slaw

1 cup light mayo or vegan mayo1/2 cup crushed peanuts1 TBS curry powder1/2medium head of green cabbage(shredded)1/4 medium head of napa cabbage(shredded)1 medium zucchini or other summer squash, shredded or grated1 large carrot, grated2 green or Granny Smith apples, small cubes
Mix mayo and curry power in LARGE bowl until well-blended.
Add all remaining ingredients EXCEPT PEANUTS.
Toss and toss to coat all with may mixture.
(I usually do the coating in two batches).
Cover and chill.
Makes about 16 1/2-cup servings
