Wheat Berry Salad

Ingredients
1 cup raw wheat berries2 large onions, chopped2-1/2 cups chickpeas - drained and rinsed1/3 cup low sodium chicken broth4 tbsp Kraft Olive Oil Sun Dried Tomato Dressing4 tbsp fresh Cilantro, chopped3 cloves Garlic, minced4 cups water
Directions
Soak wheat berries for 24 hours. Drain, and simmer in 4 cups of water for 45-60 minutes

Roast onions until golden, stir in cooked wheat berries, chickpeas, garlic and broth.

Roast another 30 minutes.

Stir in dressing and cilantro

Chill and serve.

Makes 10 - 1/2 cup servings
