Tex Mex Breakfast Quiche

Ingredients
1 cup 1% cottage cheese2 cups egg substitute (I use Kirkland Egg Starts)1/2 cup Shredded Mexican Cheese BlendI can diced tomatoes with green chilies, drained3 Tbsp diced raw onionMrs. Dash to taste
Directions
Pre heat oven to 375. Spray 12 muffin cups with cooking spray. Mix all ingredients together in a big bowl. Spoon into muffin cups. Cook 45ish minutes until knife comes out clean. I like to add extra green chilies. Adds like 2 extra calories each.
