Potluck Casserole

Ingredients
1 lb ground turkey1 TBS olive oil1 cup chicken broth2 slices american cheesemashed potatoes, 2 cups (I used Idahoan Baby Reds Garlic & Parmesan--delicious!)1 cup cream of mushroom soupfrozen broccolifrozen mixed vegetablesfrozen chopped bell pepper
Directions
brown turkey in olive oil
add frozen veggies and saute (I added Italian Seasoning, garlic, salt-free poultry seasoning and pepper for flavor)
add chicken broth & bring to boil to cook veggies
add cream of mushroom soup and simmer
add sliced cheese and stir to melt through
pour mixture into greased baking dish
top with mashed potatoes

Bake at 350 for 15 min until heated through

Makes 4 large servings (1.5 cups)

I'm not sure if the sodium content on here is exactly right--it depends on the brand of product you use. Of course, it's hard to control sodium content when you use convenience items like canned foods and packaged potatoes. I'm sure this recipe can be tweaked to reduce the sodium!
