Potato Pancakes (vegan)

Ingredients
3 cups grated potato, raw3/8 cup plain soymilk1 TB Ener-G egg replacement (mixed in 4 TB water)1/4 cup whole wheat flour1 whole grated onion, raw2 tsp salt2 dash pepperin skillet: TB olive oil & TB buttery spread
Directions
Mix all ingredients together. Drop by Tablespoon onto hot skillet (1 TB olive oil, 1 TB buttery spread) and press down with spatula to flatten. Cook 3-5 minutes on each side or until browned.

Serve with unsweetened applesauce.
