Low Carb Peach Melba Cream Dessert

2c. heavy whipping cream (1c. hot and 1c. cold)1 pkg sugar free peach jello1Tbsp of Davinci brand sugar free raspberry syrup
Heat 1c. cream in a glass cereal bowl in the microwave for 2 minutes or until very hot.
Put the peach jello and raspberry syrup in the hot cream and stirr until combined and all the jello is disolved. Let it cool to room temp.
Use a well chilled metal bowl and beaters and put the 1c. chilled cream in the bowl.
While on low speed slowly mix in the peach cream to the cream in the bowl.
Beat on high unitl a nice thick texture. (the cream won't beat to a regular thickness like plain whipping cream but after it sets up in the fridge it will have a wonderful texture)
1.7 net carbs and makes 8 1/2c. servings
