Ingredients
Directions
3/4 lb boneless skinless chicken thighs(trimmed of visible fat if you can)Marinade:1 cup low fat buttermilk2 tbs curry powder (hot or sweet, I use a mix of both)1 tbs ground coriander1 tbs ground cumin1 tbs garam masala1 tbs lemon zest.
Drop marinade ingredients into a bag, and mix up..
Add Chicken thighs.
Seal bag and stick in fridge for at least one hour - more is better (I will start it in the am before heading out to work)
(note- if you can't get buttermilk, low fat plain yogurt can be substitured easily)
When you're ready... grill, roast, broil the chicken til done.
NOTE:If you cut the chicken into chunks - you can broil those and they make nice tidbits for football parties or other events where "man food' is needed. :D
It's great served cold the next day in a pita w/ some lettuce, tomato,c ucumbers and some yogurt
