1/2 cup pumpkin3 eggs2/3 cup sugar1 t vanilla.5 cup butter, melted and cooled2.25 cups flour2 t baking powder2 t pumpkin pie spice
Makes 48 4 or 5" pizzelles.
Heat pizzelle iron.
Beat together eggs and sugar, add vanilla and butter, and mix well. Sift together dry ingredients and mix into eggs. Drop by rounded teaspoons onto heated iron, and cook for 35 seconds. Shape quickly when coming off iron: rolls for cannolis, or bowls, or flat for cookies. Check out my maple cream filling for cannolis!
