Ingredients: *Laughing Cow Light Creamy Swiss Original Cheese (Serving = 1 wedge), 4 serving Onions, 1 medium (2-1/2" dia) Green Onions, 1 cup, chopped Kraft fat free mexican cheese blend, 8 oz Garlic, minced, 3 cloves Ground Cumin (divided), 3/4 tspParsley, dried, 1 tsp light butter or margarine, 1/4 C3 C cooked cubed chicken Flour, whole grain, 1/4 C98% fat free chicken broth, 1 1/2 Cfat free Mozzarella cheese, 1 cup Fat Free Sour Cream, 1 cup Green Chilies (chopped), 4 oz Salt, 1/8 tspPepper, black, 1/8 tspThyme, ground, 1/8 tsp6 La Tortilla Factory - Low Carb Tortilla (large)
In a mixing bowl, combine cream cheese, onions (not green ones), 1 1/2 C Mexican cheese, garlic, 1/4 teaspoon cumin and parsley. Stir in chicken; set aside. In a saucepan, melt butter. Stir in flour until smooth; gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in Mozzarella cheese, sour cream, chilies, thyme, salt, pepper and remaining cumin. Spread 1/2 C of the cheese sauce in a greased 13"x9"x2" baking dish. Top with 3 tortilla halves, 1/2 the chicken mixture, and 1/3 of the cheese sauce. Layer twice. Top with remaining cheese sauce, Mexican cheese, and green onions. Cover and bake at 350 degrees for 30 minutes. Uncover; bake 10 minutes longer or until heated through. Let stand 5 minutes before cutting. Yields 12 servings.
