Lentil Sloppy Joes (vegan)

Ingredients
1/2 cup catsup2 cups water1 tablespoon yellow or dijon mustard1 tablespoon brown sugar1 tablespoon balsamic vinegar1/2 teaspoon salt1/2 teaspoon basil1/2 teaspoon oregano1/2 teaspoon thyme1/4 teaspoon pepper1 cup finely chopped onions1 cup finely chopped celery3 cloves garlic2 cups dry uncooked lentils(hamburger buns)(chopped raw onion, optional)
Directions
1.Place the catsup, water, mustard, brown sugar, vinegar, salt, basil, oregano, and thyme in the slow cooker. Turn it on and let it heat up.

2.Pick over and rinse the lentils. Set aside.

3.Spray a skillet with non-stick spray. Saute the onions, and celery for about 5 minutes, adding water as needed until cooked. Add the garlic and cook and stir for about a minute longer. Then add the rinsed lentils. Cook and stir for a minute or so until the lentils are hot.

4. Pour the lentil mixture into the slow cooker with the catsup/water/spices mixture.

5. Cook on low for about 6 hours.

6. Serve over hamburger buns. Makes 5 servings, 1 cup each. Garnish with chopped raw onion if desired.
