The easiest way to cook Eggplant that i found is to slice it in half, length-wise and bake in the oven at 400 degrees for about 1/2 an hour. spray pan with cooking spray?
scoop out the meat with a spoon. Then there are lots of ways to eat it. A couple ways are: Add ½ cup tomato & basil sauce , Add low fat or fat free mozzarella cheese,microwave until the cheese melts, Or you can Add Harisa Morrocan spicy paste)& tomato paste, mix & eat,
or just add anything that sounds good to you.
