6 medium summer squash, halved150 g cooked potatoes, mashed100 g yogurt100 g corn25 g green onion25 g grated cheeseSalt, pepper, nutmeg
Bake squash at 350°F for 20 min. scrape out the inner soft part and place the empty skins on a baking sheet. combine chopped up squash, and the rest of the ingredients in a bowl, season and fill squashes with the filling. bake at 400°F until heated through and lightly browned.
