1 medium cucumber1.5 to 2 cups of cherry tomatos10 fresh basil leaves,drizzle olive oil3tbs of balsamic or red wine vinegarseason salt to tastepepper to tastadd garlic powder to taste and top with cheese
Chop up veggies and basil. Drizzle extra light olive oil and vinegar over veggies and basil. Season to taste. Right before serving top with 2 oz
of cheese. You can make larger servings of this, its a great way to use alot of veggies that are really ripe.
