No-Sugar Added Pear/Apple Bread

Ingredients
8 Tbsp Butter (1/2 a stick)1 package of cream cheese (1/3 fat, or low-fat)2 Eggs1 Medium Apple, chopped (about 1 Cup)1 Large, over-ripe Pear, chopped/sliced (about 1 cup)1 tsp Vanilla Extract1/2 C Splenda1 Tbsp Fat-Free Sugar-Free Jello Pudding mix (Vanilla)2 1/4 C Whole Wheat flour1/2 tsp Baking Soda1 1/2 tsp Baking Powder1 tsp Cinnamon
Directions
Combine all dry ingredients (preferably through a sifter for an even distribution): Flour, baking powder, baking soda, and cinnamon. DO NOT ADD SPLENDA YET!

Soften and whip together the butter and cream cheese. Gradually add the Splenda to the mixture, and keeping whipping. Add each egg, one at a time, and whip until mixture is light and fluffy.

Puree the (very ripe) pear slices in food processor or blender; pour into a strainer to eliminate skin. Should be juicy and look like apple sauce.

Gently fold the pear puree into the creamcheese mixture. Fold the apples into mixture after the pear puree is evenly blended. The mixture may appear runny--this is okay. Add the vanilla extract. Add the vanilla pudding mix (in powder form) to the mixture. Stir about 20 times or until the mixture appears to firm up again.

Gradually add in the dry ingredients to the wet mixture until batter is thick and sticky. Combine only until the dry and wet ingredients seem to be evenly mixed--do not over-mix!

Put batter into a greased, standard size bread loaf pan (Measures 8 1/2 x 4 1/2 x 2 1/2 inches). Bake about 45-50 mins at 350 degrees.

Makes about 20 servings. Delicious!
