Crock Pot Pomegranate Beef

Ingredients
2 lb Beef chuck, cut into stew meat pieces1 C. Unsweetened Pomegranate Juice2 C. chopped Onions5 clove Garlic, minced2 tbsp Maple Syrup1 14.5 oz. can fire roasted diced tomatoes1 tsp Cinnamon, ground25 cup packed Raisins.25 C. balsamic vinegar2 tsp Rosemary, dried or 1 sprig fresh2 tsp Marjoram, dried 1 tbsp Basil, dried2 bay leaves2 tsp Thyme, ground
Directions
Preheat crock pot and add 2 t. olive oil. When oil is hot, add onion and garlic.

Brown off beef in a skillet on high heat just to sear the outside. Add beef to the crock pot and stir.

In a medium bowl combine all other ingredients. Pour over beef and stir. Cover and cook High 4 hours, or Low 6-8 hours. Serve over mashed potatoes.

    I made this yesterday and it was wonderful. I loved how the raisins soaked in the juices! Could definitely cut this in half as it was a little too much for my family, but the leftovers are very much welcomed. Will be making this again! - 2/24/09

    I didn't have any beef, so I recalculated this with the recipe calculator using a whole 3 lb. chicken that I'd removed the skin from. OMG this is a great recipe!! I will make this again and again! we loved it. - 1/12/09

    Love this recipe. There are probably even a few less calories than listed (since you don't consume all of the cooking liquid) Very tender and makes for great leftovers the next day. - 1/5/09

    This turned out wonderfully! I made a half-recipe, but still used 2 cups of chopped red onion, and served over a baked potato. Would also be good with mushrooms added in, I think. The serving size seemed a little small for dinner portions - perhaps 8 servings instead of 12. - 12/8/08
