Chickpea Curry with Fresh Dill

2 Tbs Olive Oil1 medium yello onion, finely chopped (about 1.5 Cups)1/2 tsp cayenne1 tsp coriander seeds, finely ground1 tsp finely grated garlic (about 2 large cloves)1 tsp finely grated fresh ginger root (about 2-inch piece)1/2 tsp ground turmeric1 cup tomato, finely chopped3 cups dill leaves and tender stalks, finely chopped (about 2 bunches)1 can (15.5 oz) chickpeas (garbanzo beans)1/4 cup water1 tsp salt
Heat the oil in a medium saucepan and saute the onion over medium heat until it has softened, about 5 minutes. Add teh cayenne, coriander, garic, ginger, and turmeric and stir for 3 - 4 minutes. Mix in the tomato and cook until it is soft, about 5 minutes. Add the dill, chickpeas water, and salt, and simmer until the dill is soft and tender, 5 - 8 minutes. Serve warm
