L.R. cornmeal pancakes

Ingredients
1-1/3 cups whole wheat flour2/3 cup cornmeal1 T. sugar4 tsp. baking powder1/2 tsp. salt2 eggs1-1/3 cups 2% milk1 T. oil1 T. butter
Directions
preheat a large griddle. In a bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, whisk together the eggs, milk and oil; whisk into dry ingredients just until smooth. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbly. Very lightly butter the other side. Keep in warm oven while baking the rest of the batter. Makes about 11 pancakes.
