Chicken Stuffed With Spinach and Feta

Ingredients
-3 Boneless Skinless Chicken Breast (1lb pkg)-1 10oz. Pkg of Frozen Chopped Spinach-1 Cup of Athenos Basil and Tomato Reduced Fat Feta Cheese-1/2 Cup Grated Parmesan Cheese-2 Tbs. of Olive Oil
Directions
-Preheat oven to 350 degrees
-Remove chicken breast from package.
- With a small knife cut a small pocket into each chicken breast.
-Defrost spinach in microwave.
-Squeeze out all liquid from thawed spinach.
-In a bowl, mix together spinach, feta cheese and parmesan cheese.
-Stuff mixture into chicken breast. (Secure opening with tooth picks)
-Heat 2tbs. Olive oil in a large skillet.
-Add chicken breast to pan and sear until golden brown on both sides. (Chicken will not be cooked through)
-Remove chicken from pan to a baking dish.
-Finish baking in oven until chicken is cooked through.
