Ingredients
Turkey MeatBalls1 Lb Ground Turkey1 cup of chopped onion1 large clove of garlic minced1/2 cup of grated parmesan Cheese1 egg1 tsp salt 1/2 of Black PepperMix Ingredients and put in refrigerator to chill1 cup chopped onion1 large clove of garlic minced1 tbsp of olive oilSaute onions and garlic in olive oil for 3 minutesTake out turkey from refrigerator, wet hand and roll mini meatball and add to sauted onions and garlic. Let cook about 10 minutes until meatballs are lightly browned.2 medium zucchini chopped4 cups of shredded cabbage1 jalapeno pepper minced4 cups of Chicken Broth4 cups of Tomato Juice3- 14.5 ounce cans of Diced Tomatos2 tsp of Basil1 tsp salt1/2 tsp pepperAdd to meatball and cook for 30 minutes until cabbage and zucchini is cooked to your liking2 cups of baby spinachadd to soup 5 minutes before servingGarnish with parmesan cheese

    made this tonight and it was very good I used a bag of frozen mixed veggies(corn, broccoli and cauliflower) since I didn't have any zucchini , cabbage or spinach. I did everything else the same and everyone loved it - 2/14/12
