Vera's Farfalle Al Salmone (Salmon Pasta)

Ingredients
3.5 oz. smoked salmon1 medium onion, finely sliced2-3 ripe tomatoes, finely diced1 lb butterfly pasta (farfalle)1/2 C parmesan cheese, grated1/4 C butter7 oz. panna chef or heavy creamsalt to taste
Directions
Saute onions in butter, then add salmon*, tomatoes and salt. Let simmer for 20-30 minutes with lid on pan. Remove lid and add cream. Set pan aside. Boil pasta according to instructions, drain, and add to salmon mixture, blending well. Sprinkle parmesan cheese on top.

Serves 4-6

*Note: Use either fresh or frozen smoked salmon, not canned.
