Mexican Goulash

Ingredients
1 boneless, skinless chicken breast1 (10oz) can diced tomatoes with green chiles1 can corn; drained1 can black beans; rinsed & drained1/2 cup black bean salsa3/4 cup chopped onionsSeason to taste, with:Chili powder, Cumin, Garlic powder, Oregano, & Sea salt
Directions
Cut chicken breast into smaller pieces (about 5-6 pieces); place in baking dish and bake uncovered at 425 until done (roughly 15 minutes).

While chicken is cooking, combine the rest of the ingredients in small dutch oven/large pot over medium-low heat.

When chicken is done, remove from oven and shred. Pour into pot and stir over medium-high heat until heated through.

Great served up with a fork - OR - in whole wheat/low fat tortillas. Finish it off with light sour cream and fat-free cheddar cheese.
