Bancroft's Buttermilk Pancakes

Ingredients
Directions
dry ingredients: 2C flour, 4Tbs sugar, 4tsp baking powder, 1tsp baking soda, 1dash saltwet ingredients: 3 large eggs, 1Tbs vanilla extract, 1/3C Canola or vegetable oil, ~2C buttermilk(to batter consistency)
mix dry ingredients together in a large mixing bowl, mix wet ingredients in a seperate bowl until well blended.
pour wet mix into dry while stirring. add extra buttermilk if necessary to come to the proper consistency for pancake batter.
cook in a pre-sprayed skillet or griddle at 350 degrees or medium heat until dark golden, flip and cook both sides. serve with coolwhip or low carb syrup and enjoy!
