Tomato Lentil Soup

Ingredients
Green lentils, 1 cupwater, 5 cupssalt, 1/2 tspbutter or margarine, 2 Tbspchopped onion, 2 cupsgrated carrot, 1 cupcanned tomatoes, with juice, mashed, 28 ozgarlic clove(optional)granulated sugar, 1 tsppepper1/4 tspdried basil, 1/2 tspdried marjoram, 1/2 tspchili powder, 1/2 tsp
Directions
Cook lentils in water and salt about 30-40 minutes till tender and water has become thick.
Meanwhile, heat butter in large pot. Add onion and carrot, and saute till soft. Add to this mixture the tomatoes and remaining ingredients, and let simmer for about 30 minutes. Stir occasionally. When this is done, add cooked lentils and water to this, cooking about 5 more minutes.
If you want a non vegetarian version, cooked sliced sausage added to this makes a nice addition. Makes about 8 1 cup servings.

    Oh My! If I could add 5 more stars I would!!! I did add more garlic (total 3 cloves) and I used some leftover chicken and veg broths. This is my new favorite!!! Thank you so much for sharing this one! - 2/4/09

    I used vegetable broth and more shredded carrot than was called for, and less onion. This is a fabulous soup with wonderful taste and texture. - 1/28/09

    This was excellent although I added orzo for a bit more of a "heft" to the meal. I also used fresh marjoram and basil from my garden. Overall, a great fall dish! - 10/28/08
