SPINACH AND COURGETTE SOUP

1 Onion, medium, chopped1 Potato, medium, chopped1 Zucchini/Courgette, large, chopped1 packet of fresh Spinach, or 3-4 blocks of frozen spinach2 pints of Chicken or Vegetable Stock1 tbsp Vegetable OilSalt and Pepper
This is really easy to make and will feed 4 people.
Prepare all the vegetables, heat the oil in a large pan and add the onion and zucchini/courgette until the onion is transparent.
Add all the other ingredients and bring to the boil.
Cover and simmer for 30 minutes.
Blend until smooth.
It really is that easy and freezes beautifully.
Serve with croutons and if you're having friends over you can swirl a tsp of cream or creme fraiche in each bowl before you serve.
