Zucchini Brownies

3-4 c shredded zucchini1 1/2 c flour1/2 c wheat flour1 c sugar1/2 c brown sugar1 tsp salt1 1/4 tsp baking soda1/2 c cocoa1/2 c applesauce2 egg whites2 tsp vanilla1 tablespoon canola or olive oil
Sift dry ingredients. Mix wet ingredients. Mix all together until blended, careful not to over mix. Batter will be thick but if it seems too thick add a little water or milk. Pour into greased 9x13" pan. Bake for 20-25 minutes or pour in cookie sheet and bake for around 18 minutes. Test by sticking with toothpick and if too wet bake a little longer but you want a little brownie on the toothpick. Top with icing or leave without! Eat alongside cold milk!
