Creole Catfish

4 catfish filets2 TBLS olive oil1Cup flour1 TBLS and 2 tsps Tony Chachere's Creole Seasoning1 Can petite diced tomatoes4-5 green onions, diced stalks and all1/2 green pepper, diced1Tbls minced garlicjuice of 1 lemonsalt and pepper to taste
Mix the flour and 1 TBLS creole seasoning. Add the 2 TBLS olive oil to frying pan and heat on Med. High. Lightly dust cleaned catfish fillets with flour/seasoning mixture and place in skillet for about 3-4 minutes on each side. Once the catfish is done - when it is white and flakes easily, remove from skillet. Add the garlic, the 2 tsps seasoning, the lemon juice, and the can of petite diced tomatoes (You can use fresh tomatoes in season) to the skillet, then add the diced green onions, stalks and all. and the diced green pepper to the skillet and cook over medium heat for 4-5 minutes for all the flavors to blend. Spoon the vegitable sauce over the fish filets and serve!

Looks yummy, I could probably make it with whatever seasoning mix I have at home. I'm not fond of green pepper, so I might substitute some other veggie. And I think you could use Olive Oil spray to cut the fat content. That's a LOT of flour...would you really use a whole cup to coat 4 filets? - 3/21/07
