Spinach-Mushroom Quesadillas

Ingredients
1 tsp olive oil1 whole wheat tortilla2/3 cup mozzarella cheese1/2 cup frozen spinach (thawed)1/3 cup thinly sliced portabella mushrooms1 tsp ground cumin1 tsp minced garlic
Directions
Mix together spinach, cumin, and garlic in a bowl and set aside. Coat cooking area of skillet with a thin layer of olive oil. Lay tortilla on a medium-low heated skillet. Spread cheese and mushrooms evenly on half of the tortilla. Add spinach mixture on tortilla and fold the tortilla into a half-moon. When cheese begins to melt, flip the tortilla. When all of the cheese has melted, remove from heat and cut into fours.

    I actually did it without the mushroom - I love the spinach and cheese combination. The seasonings were really good - I hadn't tried cumin in a quesadilla before. - 3/13/07
