Blended Lemon Lentil Soup

Ingredients
4 cups of water1 cup of lentils1 tb. olive oil2-3 cloves garlic1 medium onion1 tsp. cumin (optional)1/2 tsp. salt1/3 cup lemon juiceparsley for garnish
Directions
1. Bring the water to a boil and add the lentils. Then reduce the heat to medium-low, cover and simmer for 30 minutes.

2. Meanwhile, heat the olive oil in a frying pan. Add the garlic and onion and cook for about 3 minutes.

3. Add the onions, garlic, salt, and cumin to the lentils.

4. Pour it all into a blender and blend it together. You might want to do half at a time.

5. Put lemon juice and another half cup of water in the blender and blend with what has remained on the sides. Scrape the sides and blend again.

6. Mix the lemon juice and water into the soup. Add a bit more water if needed.

Makes 4 1 cup servings.
