Pork Cutlets

Ingredients
4 tsp olive oilcoarse salt and ground pepper2 boneless pork loin chops1/4 cup all purpose flour
Directions
trim pork chops of visible fat and butterfly. Place each piece between plastic wrap and pound with mallet until 1/4 inch thick.

heat 1 tsp oil in skillet and add 1 cutlet to the pan cooking for 1-3 minutes until browned. Turn and cook until translucent through out, about 30 seconds more. Repeat with remain 3 cutlets using one tsp of oil for each.
4 servings, 1 cutlet each.
