Tomato Basil Pasta Sauce

Ingredients
1 tbsp olive oil1 6 oz can tomato paste2 28 oz cans diced plum tomatoes1 54 oz can tomato juice1 lg onion chopped coarse3 cloves garlic chopped course1 jalapeno pepper, ribs and seeds removed as desired1/4 c. parmesan cheese, gratedhandful of fresh basil2 tsp salt1 tsp black pepper3 tsp sugar
Directions
Makes 4 quarts sauce - 32 1/2-cup servings.

Heat olive oil in large stock pot, add tomato paste and saute until fragrant. Using blender, puree plum tomatoes, garlic, onion and jalapeno peppers. Add pureed tomato mixture along with tomato juice to stock pot and stir until combined with tomato paste. Add fresh basil, spices and parmesan cheese. Bring to a boil, stirring often, then reducing heat to minimum. Simmer until sauce has thickened, stirring occaisionaly - about 3-4 hours. Remove basil leaves. Serve over pasta. Extra sauce can be frozen or preserved in canning jars.
