Banana Blueberry Muffins

Ingredients
1 cup sugar 1/2 cup applesauce (unsweetened)2 eggs1/2 cup milk (or buttermilk)5 mashed banana1 tsp vanilla extract1 tsp baking soda1 tsp salt2 1/2 cup flour2 cups blueberry (frozen, unthawed; or fresh)
Directions
Mix sugar, applesauce, eggs, and milk (nonfat buttermilk is also a great substitution). Mash bananas and mix in. Add vanilla, baking soda, salt and flour. Stir until just moistened. Gently fold in Blueberries.
Spoon into muffin tin.
Cook at 350 for 20-25 minutes
Yield 24 muffins
