Ingredients

1 large Yukon Gold Potato.50 tbsp of butter1 clove of garlic1/2 small onion1/2 tsp curry powder2 cups fresh baby spinach1 plum tomato
Cut up potato and boil.
Put butter in a pan.
Slice onion and add to pan.
Crush garlic add salt and mash into a paste, then add to pan.
Add boiled potao to pan.
Sprinkle curry powder.
Add Spinach and allow it to wilt down.
Cut tomato and remove seeds then add to pan.
Allow to cook for 2-4 more minutes until all is warm and serve.
