carrot bran muffins

Ingredients
2 egg whites3/4 cup milk1/2 cup maple syrup2 tbs. canola oil1/2 cup grated carrot1/2 cup grated apple3/4 cup whole wheat flour1/2 cup wheat bran1/4 cup white flour1 tsp. baking powder1 tsp. baking soda1/2 tsp. salt1/2 tsp. cinnamon
Directions
Beat the egg whites, milk, oil, and syrup together. Mix in the grated carrots and apple. In a separate bowl, combine the dry ingredients. Add the dry ingredients to the wet, mixing only until just moistened. DO NOT OVER STIR! Pour into 12 muffin tins, bake at 375 F for 18 to 20 min. Let cool for 5 minutes, remove to wire rack to cool completely. Makes 12 muffins
