Chocolate Chip Banana Nut Muffins

1/2 cup whole wheat flour1/4 cup packed brown sugar1/8 cup mini semi-sweet chocolate chips1/8 cup chopped pecans1/2 tsp baking powder1/4 tsp baking soda1/8 tsp salt1/2 cup nonfat milk1/4 cup quaker quick oats1 egg white1/2 tsp vanilla extract1 1/2 small banana, mashed
Preheat oven to 400F.
Pour milk over oats and set in refrigerator for an hour. Combine all dry ingredients in separate bowl. Mash bananas and add to oat mixture. Stir in egg white and vanilla extract. Pour liquids into dry ingredients and mix until just combined.
Spray 6 regular-sized muffin cups with cooking spray (I used silicone muffin cups). Fill muffin cups equally (they will be quite full) and bake for 23-25 minutes.
Set on wire rack to cool for 10 minutes.
Makes 6 extra moist muffins.
