Vegan Pumpkin Pie

Ingredients
egg subsitute-for 3 eggs1/2 cup sugar1/4 cup brown sugar, packed2 cups canned pumpkin or cooked pumpkin mush2 tsp. cinnamon1 tsp. ginger1/2 tsp. ground cloves1/2 tsp. salt12 oz. soy milk1 pie shell
Directions
Preheat oven to 450 degrees. In a large non-metal bowl, combine sugars and eggs. Add in the pumpkin mush, the spices, salt, and evaporated milk. Pour the filling into the pie shell. Bake for 10 minutes, then reduce heat to 350 degrees and bake for another 50 minutes, or until pie sets. Makes 8 servings.
