ham and lentil soup with potato

Ingredients
1 tbsp olive oil1 medium chopped yellow onion1.5 tspn minced garlic8 baby carrots chopped1 1/3 c lentils4c vegetable broth1/2 c beef broth1 cup cubed boiled potato with skin6oz. cubed 95% fat free ham (3/4 c)
Directions
sautee the carrots garlic and onion in the oil in the bottom of the soup pot then add the lentils and the broth

let simmer for as long as you can - probably about an hour if you like the lentils to be nice and soft and tender

add in the ham and the potatoes whenever you feel like it after the soup begins to look like soup

after it has simmered a while, salt and pepper to taste!

serve with warm bread, or pita or crackers... over rice, cous cous, etc.

makes 4 1/2 1 cup servings once it has simmered and cooked down a bit.
