Spicy Low Fat Shrimp

Ingredients
1 lb cooked shrimp1/2 cup chopped onion1/2 cup chopped celery1/2 cup chopped green pepper2 cloves garlic, minced2 tablespoons margarine1 can diced tomatoes1/2 tsp paprika1/4 tsp salt1/4 tsp cayenne pepper (or less, depending on how spicy you want it)2 tbsp fresh parsley
Directions
Cook vegetables in margarine until tender. Add tomatoes and bring to a boil. Simmer until thickened. Add shrimp and parsley. Since shrimp is already cooked, simply heat until shrimp is a good temperature.

Serve over rice or plain. Very versatile!
