No Fat Added Pumpkin Cookies

Ingredients
1/2 cup unsweetened applesauce 1 cup brown sugar - lightly packed 2 eggs (medium) 1 tsp. Vanilla Extract 1 cup canned pumpkin puree (or fresh cooked and mashed) 2 cups all-purpose flour 4 tsp baking powder1/2 tsp salt1/2 tsp cinnamon1/2 tsp nutmeg1/4 tsp cloves1/4 tsp ginger
Directions
Preheat oven to 365 degrees farenheit

Mix together applesauce, sugar, eggs, vanilla extract and pumpkin puree. Sift together all dry ingredients. Add dry ingredients to pumpkin mixture. Drop by tablespoon full onto a lightly greased cookie sheet. Bake for about 10-12 minutes or until bottom of cookie is light brown.

Makes aprox. 45 cookies.

    My kids loved these, and I liked them very much. They are quite cake-like, which isn't my favorite cookie texture, but I know that's a result of the low fat content. Might try a small amount of oil next time instead of the applesauce and see how that affects the texture. - 6/8/10
