8 oz (1/2 lb) 93% lean ground beef8 oz diced fresh mushrooms1 t oregano1 T chili powder1 T smoked paprika1 t cumin2 t garlic powder1 t chipotle chili powderBlack pepper (severa turns of a grinder)2 cans petite diced tomatoes, with liquid1 can black beans, with liquid1 6-oz can tomato paste1 cup frozen corn
Brown meat and mushrooms until excess water boils off and meat is cooked. Add spices, cook for 1-2 minutes. Add tomatoes, beans, and tomato paste. Bring to a boil, simmer 15 minutes. Add corn, simmer an additional 5 minutes, or until you're ready to eat (no longer than 1 hour total unless you add some water).
Secret Ingredient for Special Occasions: Add 2 1-oz shots of good whiskey (Gentleman Jack is what we use) just after adding the tomatoes and beans.
