Cabbage Soup

Ingredients
1 tsp olive oil3 medium onions diced4 stalks celery diced4 medium carrots diced8 cloves garlic roughly chopped1 medium head cabbage chopped (I used savoy)8 large scallions diced48 oz Low Sodium V86 cups water1 lb grape tomatoes or cherry1 tbsp basil1 tsp black pepper1.5 cups spinach1 cup diced mushrooms1.5 cups frozen green beans
Directions
In a large soup pot heat olive oil over medium high heat add onions, celery, carrots, garlic saute for 5 minutes, add cabbage and scallions cook 2-3 minutes. Add V8 and 6 cups water, bring to a simmer and cover for 10 minutes. Add green beans, mushrooms and spinach cook 10-15 minutes more or until vegetables are tender.
