Sticky Date Pudding with Caramel Sauce

170g plain flour (all-purpose)170g castor sugar (superfine)60g melted butter1 egg1 teaspoon vanilla extract170g dates (pitted & chopped)1 teaspoon bicarb of soda (baking soda)1 cup waterCaramel Sauce1 cup brown sugar8 tablespoons cream120g butter1 teaspoon vanilla extract
I make this in an oven proof dish but you could make it in a greased and lined 22-23cm cake pan. Preheat oven to 180C (350F).
Make the Caramel Sauce first as you will need to have it ready to drizzle some over the pudding before putting it in the oven. Combine all the caramel sauce ingredients in a saucepan and allow to simmer. Set aside.
Mix the flour, sugar, butter, egg, and vanilla in a bowl. Combine the dates and water in a saucepan and bring to the boil. Remove from heat and add the bicarb of soda (you will get a foamy reaction). Add the date mixture to the other ingredients and gently mix to combine.
Pour into your prepared dish or cake pan. Drizzle a couple of tablespoons over the the top of the pudding and bake in the oven for about 40 minutes (or until cooked). Half way through the baking process, drizzle some more of the caramel sauce over the pudding to keep it moist and not 'cakey'.
Serve pudding with more caramel sauce and vanilla ice cream.

I've never made sticky date pudding and I can't tell how many servings it makes. (You may want to revise your recipe to include the number of servings, as no one on this site should be willing to eat a 4,000 calorie dessert!) Assuming it's a regular cake pan, 8 servings would still be 482 calories - 11/18/10
