Enchiladias Fantastica

1 lb ground turkey2 cups picante sauce1 pkg frozen chopped spinach (well squeezed)2 tsp ground cumin1/2 tsp salt1 pkg 8(oz) Fat Free cream cheese cubed12 7" low carb whole wheat tortillas1 can 14.5 diced tomatoes in juice1 cup 4(oz) low fat cheddar cheeseTOPPINGS:12 tbsp sour cream 3-4 cups shredded lettuce
Brown turkey in large skillet add 1 cup picante sauce, the package of thawed squeezed spinach, 1.5 tsp cumin , and 1/2 tsp salt. Cook and stir 5 minutes or until most of liquid is gone. Add cream cheese stir until just melted. Remove from heat.
Spoon about 1/3 cup of filling down the center of each tortilla. Roll up and place seam side down in lightly greased baking dish
Combine remaining cup of salsa and 1/2 teaspoon of cumin mix well and spoon over enchiladias. Bake at 350 degrees for 15 minutes remove from oven sprinkle cup of cheese over top of enchiladias return to oven for 2-5 minutes or until cheese is melted.
Makes 12 large servings or 24 smaller servings.
My family loves this served with shredded lettuce and a dallop of sour cream. the nutritional info includes the toppings.
