Ingredients
Directions
1/2 head cauliflower1 cup mushrooms, sliced2 T dry vermouth3 tsp chicken boullion granules2 T butter3/4 C parmesan cheese (I sub 2 slices kraft white american singles when I discovered out of parm....prob not as good, but still yummy!)1/2 medium onion, diced
Makes 3 good size servings, or 5 smaller servings.
Using my small food processor, grind the raw cauliflower until it resembles couscous grains. Put it into a microwave safe dish and nuke it for 5 minutes with a couple tablespoons of water. While that is cooking, melt the butter in a pan and add the mushrooms and onions and saute all together. When cauliflower is done, drain and add to the saute pan. Stir in the boullion, vermouth, cheese and let it cook for a couple to three minutes. YUM!
