Lemon Pepper Cornish Hen

1 Cornish Hen Thawed1 Stick of ButterLemon Pepper, to tasteGarlic Salt, to taste
Preheat oven to 350.
Sprinkle Garlic Salt and Lemon Pepper on the hen and rub all over it (including inside).
Slide your finger in under the skin and create a pocket. Take the butter and rub inside the pocket, leaving a generous amount. Do this for all areas of skin that you choose. Put the remaining butter in the cavity of the body.
Cook covered for 1 hour basting often.
Remove lid and cook at 400 until done.
Makes 2 servings of a small breast, leg and wing.
You can also use this same idea for a small chicken or a turkey.
