Chicken with Broccoli and Garlic Sauce

Ingredients
* 2 tsp olive oil * 1 pound uncooked boneless, skinless chicken breast, cut into 1-inch pieces * 1 tsp dried thyme, or 2 tbsp fresh minced thyme, or to taste * 1/2 tsp table salt * 1/4 tsp black pepper * 3 medium garlic clove(s), minced, or more to taste * 2 cup broccoli, florets * 1 1/2 cup reduced-sodium chicken broth, divided * 1 1/2 Tbsp cornstarch * 2 cup cooked brown rice, kept hot
Directions
* Heat oil in a large skillet over medium-high heat. Place chicken on a plate and season with thyme, salt and pepper. Add garlic to skillet and cook, stirring, 1 minute. Add chicken to skillet and cook until browned on all sides, stirring frequently, about 3 minutes.

* Add broccoli to skillet, cover and cook 2 minutes. Add 1 cup of broth, cover and simmer until chicken is cooked through, about 5 minutes.

* In a cup, dissolve cornstarch in remaining 1/2 cup of broth; add to skillet. Simmer until mixture thickens, stirring constantly, about 1 minute; serve over rice. Yields about 1 cup of chicken and broccoli and 1/2 cup of rice per serving.

    There's no possible way the recipe, as listed, is only 187 calories. There is definitely at least one major ingredient not included in the calculation. Just 1/2 cup of brown rice is over 100 calories and 1/4 lb of chicken is also around 125 calories, so it's well over 200 calories per serving. - 4/25/11

    I made over the recipe with 12 ounces of chicken and 2 cups of brown rice and for four servings it's about 265 calories for one serving. - 6/6/12

    Even after losing the broth and going down to 10oz of chicken, it still says 236 calories. I have no idea how it could possibly be only 129 calories. - 1/28/11

    This was really good. Tried it without the chicken broth the 2nd time, and without the thyme both times cause it wouldn't mince, and I actually liked it much more brothless. The garlic flavor really came out w/o the broth and was delicious. Didn't bother with the rice the second time either. - 8/22/11

    This was an easy and quick recipe. Very tasty and for those of you who thought it was flavourless, add your own spices as you go, you know what you like. I put in 8 cloves of garlic (I love garlic) and instead of pepper I used spiced mixed pepper. It was delicious. - 1/22/11
