Cauliflower soup with Horseradish

Ingredients
5 cups roasted cauliflower1 container of chicken broth1 red pepper1 onion1 large potato5 cloves of garlicolive oilsalt and pepper
Directions
1.Roast 1 head of cauliflower florets at 400 degrees until tender (approximately 40 minutes). spray or coat sparingly with olive oil and add salt and pepper.

2. In 4 quart pot add course chop the onion and red pepper and saute in olive oil. (you choose how much). Add salt and pepper.
3. Add to this one container of Swanson chicken broth (or your favorite brand), 5 gloves of garlic and 1 large potato cut into one inch cubes. Cook until potatoes are tender

Combine all ingredients in blender. Be careful as all ingredients are very hot. Blend in batches until creamy.

Add sour cream and horseradish. Adjusting both to your taste. Add salt and pepper to your taste.

Enjoy.
