Low-Carb Peanut Butter Cookies

1 cup peanut butter (chunky)1/2 cup splenda1/4 cup egg substitute1 tsp vanilla
Combine ingredients until well blended. Roll into one-inch balls and make crosshatch marks with a fork, pressing slightly. These cookies do not spread out much. Bake at 350 degrees for 10 minutes. Cool on wire rack. Makes 2 dozen.
