Tilapia with Chili Cream Sauce

Ingredients
1 lb tilapia filets (4 4oz filets)2 tbsp cornmeal2 tbsp flourNonstick cooking spray1 tsp olive oil1tbsp butter2 tsp flour1 tbsp chili powder1/2 tsp ground cumin3/4 cup half and half2 tbsp chopped cilantro
Directions
1) Thaw fish if frozen, pat dry with paper towels. In a small bowl stir together cornmeal and 2 tbsp of flour. Sprinkle over both sides of each piece of fish. Lightly coat a 12-inch nonstick skillet with cooking spray. Add the oil and preaheat the skillet over medium-high heat. Add the fish cook over medium to med-high heat for 4 to 6 minutes or until fish flakes easily, turning once. Remove fish from skillet keep warm.

2) For sauce, melt butter in the same skillet. Stir in 2 tsp of flour, the chili powder, and cumin. Stir in half and half. Cook and stir until thickened and bubbly. Cook and stir for 1 min more. To serve spoon the sauce over the fish and garnish with the chopped cilantro.

    This recipe was very good, althought the sauce was a bit thick. I would add less flour then it asks for, also the fish itself was a little bland, I would mix some salt and pepper to the cornmeal and flour. I made some veggies patties with it and it was a wonderful meal. - 1/20/09
