Cuban-Style Meatless Black Bean Soup

Ingredients
2 cups dry black beans1/2 cup chopped onion2 Cloves garlic, crushed2 tsp olive oil1 tsp ground cumin1 large or 2 small bay leaves1 Tbsp sugar1 Tbsp white vinegar1 tsp thyme1/4 tsp kosher salt1 tsp ground coriander1/8 tsp black pepper1 Tbsp fresh Cilantro
Directions
place black beans in a soup pot and soak overnight. After soaking remove from pot, rinse well, and set aside. Spray the soup pot with nonstick cooking spray and then add 2 tsp olive oil. Saute onion and garlic until soft. Add beans to the pot and continue to saute for another 2 minutes, stirring constantly to prevent beans from sticking. Add water to cover beans about 1 inch. Add remaining ingredients, except cilantro, and bring to a boil. Reduce heat and simmer for 1 to 1-1/2 hours or until beans are tender. If a thicker soup is desired, remove some of the beans and puree in a blender. Stir to combine after adding puree to pot. Serve over rice and garnish with cilantro if desired.

    Following this recipe to the letter using just what spices and the amounts called for it was bland. The next time I make this I would double the garlic, salt, pepper and probably double all spices except the sugar and if I used it at all it would be splenda brown. - 3/13/07

    I liked this! I added some celery, frozen corn (in place of the sugar), stewed tomatoes, 2 jalepenos, and some dried oregano. Left out the salt. Took it to a tailgate & everyone liked it very much! I just served it plain (without the rice) - warmed us up quite nicely. - 10/6/08
