Garlic Cilantro Carrot "Fries"

Ingredients
2 c carrots, cut into 1/2" wide strips1 tsp olive oil1/4 c yellow cornmeal, finely ground1 tsp garlic powder1 tsp cilantro, dried
Directions
1. Combine cornmeal, garlic powder, and cilantro in a small bowl. Mix and set aside.

2. In a zip-top plastic bag, combine carrots with olive oil and shake vigorously to coat. Add cornmeal mixture and toss. Refrigerate mixture for about 20 minutes. Preheat oven to 400 degrees.

3. Place carrot mixture in a single layer on a cookie sheet and bake for 15-20 minutes.
